Description

A comforting and hearty lasagna soup that’s easy to make and full of flavor.


Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped


Instructions

  1. In a large pot, cook the sausage over medium heat until browned. Drain excess fat.
  2. Add olive oil, onion, and garlic; sauté until onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, and Italian seasoning; bring to a simmer.
  4. Add broken lasagna noodles and cook until al dente.
  5. In a separate bowl, mix ricotta cheese with half of the mozzarella and half of the Parmesan.
  6. In bowls, serve the soup topped with the cheese mixture and remaining cheeses.
  7. Garnish with fresh basil before serving.

Notes

  • For a vegetarian option, substitute sausage with mushrooms and vegetable broth.
