Ingredients

  • 1 cup granulated sugar, divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 cup rolled oats


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a mixing bowl, combine the blueberries with ½ cup of sugar, lemon juice, lemon zest, and vanilla extract. Toss gently and set aside to marinate.
  3. In a separate bowl, mix the flour, baking powder, and sea salt together.
  4. In a large bowl, cream the softened butter with the remaining ½ cup of sugar until airy and light. Incorporate the egg and mix until fully blended.
  5. Gradually fold in the dry ingredients until just combined, then add the rolled oats and mix until evenly distributed.
  6. Press half of the oat mixture into the bottom of the prepared baking dish to create a base layer.
  7. Pour the blueberry mixture over the crust, spreading it evenly.
  8. Sprinkle the remaining crumble mixture on top of the blueberries.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
  10. Let it cool in the pan for at least 15 minutes before slicing into squares.
