- 2 cups fresh blueberries
- 1 cup granulated sugar, divided
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- ½ cup unsalted butter, softened
- 1 large egg
- 1 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- In a mixing bowl, combine the blueberries with ½ cup of sugar, lemon juice, lemon zest, and vanilla extract. Toss gently and set aside to marinate.
- In a separate bowl, mix the flour, baking powder, and sea salt together.
- In a large bowl, cream the softened butter with the remaining ½ cup of sugar until airy and light. Incorporate the egg and mix until fully blended.
- Gradually fold in the dry ingredients until just combined, then add the rolled oats and mix until evenly distributed.
- Press half of the oat mixture into the bottom of the prepared baking dish to create a base layer.
- Pour the blueberry mixture over the crust, spreading it evenly.
- Sprinkle the remaining crumble mixture on top of the blueberries.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
- Let it cool in the pan for at least 15 minutes before slicing into squares.
Notes
- For a delightful twist, consider adding a teaspoon of cinnamon to the crumble.
- You can swap out blueberries for raspberries or strawberries for a refreshing change.
