- 1/2 cup coconut oil, melted
- 1/4 cup almond flour
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons erythritol (or preferred sweetener)
Instructions
- In a mixing bowl, combine shredded coconut, melted coconut oil, almond flour, lemon juice, lemon zest, vanilla extract, salt, and erythritol.
- Mix until well combined and the mixture holds together.
- Form the mixture into small balls or bombs and place them on a parchment-lined tray.
- Refrigerate for at least 30 minutes or until set.
