Ingredients

  • 8 large eggs
  • 1 cup cooked, shredded chicken breast
  • 2 cups fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup onion, diced
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, salt, pepper, and thyme until well combined.
  3. In an oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  4. Add the chopped spinach and cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until the spinach is wilted.
  5. Stir in the shredded chicken and mix well.
  6. Pour the egg mixture over the chicken and vegetables in the skillet, ensuring even distribution.
  7. Sprinkle the shredded mozzarella cheese on top.
  8. Cook on the stovetop for about 2-3 minutes until the edges begin to set.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and the center is set.
  10. Remove from the oven and let it cool for a few minutes before slicing into wedges.
