- 8 large eggs
- 1 cup cooked, shredded chicken breast
- 2 cups fresh spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup onion, diced
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, salt, pepper, and thyme until well combined.
- In an oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the chopped spinach and cherry tomatoes to the skillet, cooking for an additional 2-3 minutes until the spinach is wilted.
- Stir in the shredded chicken and mix well.
- Pour the egg mixture over the chicken and vegetables in the skillet, ensuring even distribution.
- Sprinkle the shredded mozzarella cheese on top.
- Cook on the stovetop for about 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and the center is set.
- Remove from the oven and let it cool for a few minutes before slicing into wedges.
Notes
- For a vegetarian option, substitute the chicken with diced bell peppers or mushrooms.
- Add a sprinkle of red pepper flakes for a bit of heat.
