Description

A refreshing and low carb dessert featuring a delightful mix of berries and vanilla jello.


Ingredients

Scale
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 package sugar-free vanilla jello
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, dissolve the sugar-free vanilla jello in the boiling water.
  2. Add the cold water and mix well.
  3. In a separate bowl, whip the heavy cream with the vanilla extract until stiff peaks form.
  4. Gently fold the whipped cream into the jello mixture until combined.
  5. Add the mixed berries and gently mix.
  6. Pour into a jello mold and refrigerate until set, about 4 hours.
  7. Once set, unmold and serve chilled.

Notes

  • For a sweeter taste, consider adding a low carb sweetener to the whipped cream.
  • Store leftovers in the refrigerator for up to 3 days.
