A refreshing and low carb dessert featuring a delightful mix of berries and vanilla jello.
Ingredients

- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 package sugar-free vanilla jello
- 2 cups boiling water
- 1 cup cold water
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, dissolve the sugar-free vanilla jello in the boiling water.
- Add the cold water and mix well.
- In a separate bowl, whip the heavy cream with the vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the jello mixture until combined.
- Add the mixed berries and gently mix.
- Pour into a jello mold and refrigerate until set, about 4 hours.
- Once set, unmold and serve chilled.
Notes
- For a sweeter taste, consider adding a low carb sweetener to the whipped cream.
- Store leftovers in the refrigerator for up to 3 days.
