Description

This Low Carb No-Bake Strawberry Mousse Pie is a delicious and easy dessert that is perfect for those following a low-carb diet.


Ingredients

  • 1 ½ cups fresh strawberries, hulled and sliced
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • ½ cup powdered erythritol or sweetener of choice
  • 1 tsp vanilla extract
  • 1 ½ cups almond flour (for crust)
  • ¼ cup unsalted butter, melted (for crust)


Instructions

  1. In a blender, puree the strawberries until smooth.
  2. In a mixing bowl, combine the cream cheese and erythritol until smooth.
  3. Add the strawberry puree and vanilla extract to the cream cheese mixture; stir until well combined.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the strawberry mixture.
  6. For the crust, combine almond flour and melted butter; press mixture into the bottom of a pie dish.
  7. Pour the strawberry mousse over the crust and spread evenly.
  8. Chill in the refrigerator for at least 4 hours or until set.
  9. Serve chilled, garnished with fresh strawberries if desired.

Notes

  • You can use frozen strawberries, just ensure to drain excess liquid before pureeing.
  • For a sweeter mousse, adjust the sweetener to taste.
