- 1 cup heavy whipping cream
- 8 oz cream cheese, softened
- ½ cup powdered erythritol or sweetener of choice
- 1 tsp vanilla extract
- 1 ½ cups almond flour (for crust)
- ¼ cup unsalted butter, melted (for crust)
Instructions
- In a blender, puree the strawberries until smooth.
- In a mixing bowl, combine the cream cheese and erythritol until smooth.
- Add the strawberry puree and vanilla extract to the cream cheese mixture; stir until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the strawberry mixture.
- For the crust, combine almond flour and melted butter; press mixture into the bottom of a pie dish.
- Pour the strawberry mousse over the crust and spread evenly.
- Chill in the refrigerator for at least 4 hours or until set.
- Serve chilled, garnished with fresh strawberries if desired.
Notes
- You can use frozen strawberries, just ensure to drain excess liquid before pureeing.
- For a sweeter mousse, adjust the sweetener to taste.
