Description

Delicious low-carb cookies made with pecans, dark chocolate, and a sprinkle of sea salt.


Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup crushed pecans
  • 1/4 cup erythritol sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup dark chocolate chips (sugar-free)
  • 1 large egg
  • 1 tablespoon melted coconut oil
  • 1/2 teaspoon sea salt (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, crushed pecans, erythritol, baking powder, and salt.
  3. Add vanilla extract, cocoa powder, egg, and melted coconut oil to the mixture and stir until combined.
  4. Fold in the dark chocolate chips.
  5. Drop spoonfuls of the dough onto the prepared baking sheet, spaced apart.
  6. Sprinkle a pinch of sea salt on top of each cookie.
  7. Bake for 10-12 minutes, or until the edges are golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

  • For extra chocolatey flavor, add more dark chocolate chips.
