Delicious low-carb cookies made with pecans, dark chocolate, and a sprinkle of sea salt.
Ingredients

- 1 cup almond flour
- 1/2 cup crushed pecans
- 1/4 cup erythritol sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/3 cup dark chocolate chips (sugar-free)
- 1 large egg
- 1 tablespoon melted coconut oil
- 1/2 teaspoon sea salt (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, crushed pecans, erythritol, baking powder, and salt.
- Add vanilla extract, cocoa powder, egg, and melted coconut oil to the mixture and stir until combined.
- Fold in the dark chocolate chips.
- Drop spoonfuls of the dough onto the prepared baking sheet, spaced apart.
- Sprinkle a pinch of sea salt on top of each cookie.
- Bake for 10-12 minutes, or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Cookies can be stored in an airtight container for up to a week.
- For extra chocolatey flavor, add more dark chocolate chips.
