- 1 pound Mahi Mahi fillets
- 4 tablespoons ghee
- 2 lemons, juiced and zested
- 2 teaspoons garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the ghee, lemon juice, lemon zest, garlic, salt, black pepper, and cayenne pepper.
- Cut the Mahi Mahi into bite-sized pieces and toss them in the lemon-ghee mixture.
- Arrange the Mahi Mahi bites on a baking sheet.
- Bake for 12-15 minutes, until the fish is cooked through and flaky.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, marinate the Mahi Mahi in the ghee mixture for 30 minutes before baking.
- Serve with a side of roasted vegetables or a light salad.
