  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Cooked rice or quinoa (for serving)


Instructions

  1. In a large bowl, combine the peanut butter, diced tomatoes, chicken broth, soy sauce, brown sugar, cumin, paprika, cayenne pepper, salt, and pepper. Mix well until smooth.
  2. Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the chicken thighs to the skillet, browning them on all sides for about 5-7 minutes.
  5. Pour the peanut butter mixture over the chicken, ensuring it is well-coated. Bring to a simmer, then reduce the heat to low.
  6. Cover and cook for 30-35 minutes, stirring occasionally, until the chicken is cooked through and tender.
  7. Taste and adjust seasoning if necessary. If the sauce is too thick, add a little more chicken broth to reach desired consistency.
  8. Serve hot over cooked rice or quinoa, garnished with chopped cilantro.
