Deliciously sweet and nutritious Mango Oatmeal Crumble Bars perfect for breakfast or a snack.
Ingredients

- 1 cup rolled oats
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 ripe mangoes, peeled and diced
- 1 tablespoon lemon juice
- 1/4 cup honey or maple syrup
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix oats, flour, brown sugar, melted butter, baking powder, and salt until crumbly.
- Press half of the mixture into the bottom of the prepared pan.
- In another bowl, toss diced mangoes with lemon juice and honey or maple syrup.
- Spread the mango mixture over the crust.
- Sprinkle the remaining crumble mixture on top of the mango.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before slicing into bars.
Notes
- Use ripe mangoes for best flavor.
- These bars can be stored in an airtight container for up to a week.
