Description

Deliciously sweet and nutritious Mango Oatmeal Crumble Bars perfect for breakfast or a snack.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon lemon juice
  • 1/4 cup honey or maple syrup


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix oats, flour, brown sugar, melted butter, baking powder, and salt until crumbly.
  3. Press half of the mixture into the bottom of the prepared pan.
  4. In another bowl, toss diced mangoes with lemon juice and honey or maple syrup.
  5. Spread the mango mixture over the crust.
  6. Sprinkle the remaining crumble mixture on top of the mango.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before slicing into bars.

Notes

  • Use ripe mangoes for best flavor.
  • These bars can be stored in an airtight container for up to a week.
