Description

A delicious and easy recipe for Maple Pecan Overnight Oats, perfect for a fall breakfast.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 cups coconut milk (or any milk of your choice)
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon sea salt
  • 1/2 cup crushed pecans
  • 1/2 cup chopped pears (optional)
  • Additional maple syrup for drizzling (optional)

Instructions

  1. In a spacious bowl, mix together the rolled oats, coconut milk, maple syrup, vanilla essence, ground nutmeg, and sea salt until everything is thoroughly blended.
  2. Gently incorporate the crushed pecans and chopped pears if you choose to include them.
  3. Spoon the mixture into four jars or airtight containers, ensuring an even distribution.
  4. Cover the jars tightly and place them in the refrigerator overnight, or for a minimum of 4 hours, allowing the oats to absorb the liquid and become tender.
  5. When you’re ready to enjoy, stir the oats well. If you prefer a creamier consistency, add a splash of milk.
  6. Finish with a drizzle of extra maple syrup and sprinkle with more pecans or pears just before serving.

Notes

  • For an even richer flavor, consider mixing in some Greek yogurt with the coconut milk.
  • You can also experiment by replacing pecans with hazelnuts or pistachios for a unique twist.
  • For an extra layer of warmth, add a dash of ginger or allspice to the mix.
