Delicious and soft Maple Pumpkin Cookies topped with a sweet maple glaze.

- 1 cup pumpkin puree
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
- ½ cup chopped pecans or walnuts (optional)
- For the Maple Glaze:
- 1 cup powdered sugar
- 2–3 tbsp maple syrup
- 1–2 tsp milk (as needed)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and brown sugar until fluffy. Mix in pumpkin puree, egg, and vanilla extract.
- In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet ingredients, mixing until combined.
- Fold in nuts if using.
- Drop spoonfuls of dough onto the baking sheet and bake for 10–12 minutes, until edges are set.
- For the glaze, whisk powdered sugar, maple syrup, and milk until smooth.
- Drizzle glaze over cooled cookies and let set.

- Ensure the butter is softened for easier mixing.
- Adjust the amount of maple syrup in the glaze to achieve desired sweetness.
