Description

Delicious and soft Maple Pumpkin Cookies topped with a sweet maple glaze.


Ingredients

  • 1 cup pumpkin puree
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ cup chopped pecans or walnuts (optional)
  • For the Maple Glaze:
  • 1 cup powdered sugar
  • 2–3 tbsp maple syrup
  • 1–2 tsp milk (as needed)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and brown sugar until fluffy. Mix in pumpkin puree, egg, and vanilla extract.
  3. In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet ingredients, mixing until combined.
  4. Fold in nuts if using.
  5. Drop spoonfuls of dough onto the baking sheet and bake for 10–12 minutes, until edges are set.
  6. For the glaze, whisk powdered sugar, maple syrup, and milk until smooth.
  7. Drizzle glaze over cooled cookies and let set.
