- 2 cups vanilla ice cream, softened
- 1 cup sweetened red bean paste (anko)
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons matcha green tea powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, matcha powder, baking powder, baking soda, and salt. Whisk together until well mixed.
- In another bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are cool, spread about 1 tablespoon of red bean paste on the bottom of one cookie, then top with a scoop of softened vanilla ice cream. Place another cookie on top to form a sandwich. Repeat with the remaining cookies.
- For the best texture, freeze the assembled ice cream sandwiches for at least 1 hour before serving.
