Ingredients

  • 2 cups vanilla ice cream, softened
  • 1 cup sweetened red bean paste (anko)
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons matcha green tea powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, matcha powder, baking powder, baking soda, and salt. Whisk together until well mixed.
  3. In another bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once the cookies are cool, spread about 1 tablespoon of red bean paste on the bottom of one cookie, then top with a scoop of softened vanilla ice cream. Place another cookie on top to form a sandwich. Repeat with the remaining cookies.
  9. For the best texture, freeze the assembled ice cream sandwiches for at least 1 hour before serving.
