A delicious and tender garlic parmesan chicken meatloaf that melts in your mouth.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon fresh parsley, chopped
- 1/4 cup milk
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup shredded mozzarella cheese (optional, for topping)
- 1 tablespoon fresh basil, chopped (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, milk, olive oil, oregano, garlic powder, salt, and pepper. Mix well until fully combined.
- Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
- Bake for 35-40 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (75°C).
- If using, sprinkle shredded mozzarella cheese on top of the meatloaf in the last 5 minutes of baking to melt and create a cheesy topping.
- Remove from the oven and let it rest for 5 minutes before slicing.
- Garnish with fresh basil before serving.

- Ensure the internal temperature of the meatloaf reaches 165°F (75°C) for safe consumption.
- Feel free to add other herbs or spices to customize the flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
