Description

A delicious and tender garlic parmesan chicken meatloaf that melts in your mouth.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)
  • 1 tablespoon fresh basil, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, milk, olive oil, oregano, garlic powder, salt, and pepper. Mix well until fully combined.
  3. Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
  4. Bake for 35-40 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (75°C).
  5. If using, sprinkle shredded mozzarella cheese on top of the meatloaf in the last 5 minutes of baking to melt and create a cheesy topping.
  6. Remove from the oven and let it rest for 5 minutes before slicing.
  7. Garnish with fresh basil before serving.
