- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup salsa (mild or spicy, based on preference)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, cumin, chili powder, salt, and pepper.
- Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, pour in the salsa and bring to a simmer. Stir in the heavy cream and mix well.
- Add the shredded cheddar and Monterey Jack cheeses to the skillet, stirring until melted and smooth.
- Place the cooked chicken breasts in a baking dish and pour the cheese sauce over the top, ensuring the chicken is well-coated.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and slightly golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
Notes
- For a spicier kick, add diced jalapeños to the cheese sauce.
- Serve with a side of rice or tortillas for a complete meal.
