Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup salsa (mild or spicy, based on preference)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro (optional for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, cumin, chili powder, salt, and pepper.
  3. Add the seasoned chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, pour in the salsa and bring to a simmer. Stir in the heavy cream and mix well.
  5. Add the shredded cheddar and Monterey Jack cheeses to the skillet, stirring until melted and smooth.
  6. Place the cooked chicken breasts in a baking dish and pour the cheese sauce over the top, ensuring the chicken is well-coated.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and slightly golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
