Description

A delightful Mexican Churro-Spiced Hot Chocolate Mousse that combines rich chocolate with a hint of cinnamon and spice, perfect for dessert lovers.

Ingredients

Scale
  • 8 ounces dark chocolate, finely chopped
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon sea salt
  • 2 tablespoons granulated sugar
  • 3 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon confectioners’ sugar
  • Cinnamon-sugar mixture (for topping)

Instructions

  1. Begin by melting the chopped dark chocolate in a heatproof bowl set over a saucepan of gently simmering water, stirring until it becomes silky and smooth. Once melted, remove from heat and allow to cool for a few minutes.
  2. In a separate bowl, vigorously whisk the egg yolks and granulated sugar together until the mixture turns a light golden color and thickens. Incorporate the vanilla extract, then slowly mix in the warm chocolate until everything is well blended.
  3. Next, in a clean bowl, whip the heavy cream with the confectioners’ sugar until soft peaks form. In another bowl, beat the egg whites until stiff peaks are achieved.
  4. Carefully fold the whipped cream into the chocolate mixture, followed by the egg whites in three parts, ensuring you maintain the airy texture.
  5. Distribute the mousse into individual serving cups or bowls. Cover them with plastic wrap and place in the refrigerator for a minimum of two hours, allowing the mousse to firm up.
  6. When ready to serve, dust the top of each mousse with the cinnamon-sugar mixture for a delightful finishing touch.

Notes

  • For a spicier kick, add more cayenne pepper to taste.
  • Ensure the chocolate is fully melted and cooled before mixing with the egg yolks to prevent curdling.
  • Can be made a day in advance for convenience.
