Instructions
- Begin by melting the chopped dark chocolate in a heatproof bowl set over a saucepan of gently simmering water, stirring until it becomes silky and smooth. Once melted, remove from heat and allow to cool for a few minutes.
- In a separate bowl, vigorously whisk the egg yolks and granulated sugar together until the mixture turns a light golden color and thickens. Incorporate the vanilla extract, then slowly mix in the warm chocolate until everything is well blended.
- Next, in a clean bowl, whip the heavy cream with the confectioners’ sugar until soft peaks form. In another bowl, beat the egg whites until stiff peaks are achieved.
- Carefully fold the whipped cream into the chocolate mixture, followed by the egg whites in three parts, ensuring you maintain the airy texture.
- Distribute the mousse into individual serving cups or bowls. Cover them with plastic wrap and place in the refrigerator for a minimum of two hours, allowing the mousse to firm up.
- When ready to serve, dust the top of each mousse with the cinnamon-sugar mixture for a delightful finishing touch.

- For a spicier kick, add more cayenne pepper to taste.
