A hearty and flavorful Mexican hominy and pork soup, filled with spices and tender meat.
Ingredients

- 2 cups hominy
- 1 pound pork shoulder, cubed
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 green bell pepper, diced
- 2 jalapeños, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add pork and brown on all sides.
- Stir in onion and garlic, cooking until softened.
- Add cumin, chili powder, salt, and pepper; mix well.
- Pour in chicken broth and bring to a boil.
- Add hominy, tomatoes, and peppers; simmer for 30 minutes.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- This soup can be made a day in advance and will taste even better the next day.
- Adjust the spiciness by adding more or fewer jalapeños.
