Description

A hearty and flavorful Mexican hominy and pork soup, filled with spices and tender meat.


Ingredients

  • 2 cups hominy
  • 1 pound pork shoulder, cubed
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 green bell pepper, diced
  • 2 jalapeños, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add pork and brown on all sides.
  3. Stir in onion and garlic, cooking until softened.
  4. Add cumin, chili powder, salt, and pepper; mix well.
  5. Pour in chicken broth and bring to a boil.
  6. Add hominy, tomatoes, and peppers; simmer for 30 minutes.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

  • This soup can be made a day in advance and will taste even better the next day.
  • Adjust the spiciness by adding more or fewer jalapeños.
