Ingredients

  • 2 cups long-grain white rice
  • 4 cups water
  • 1 cup canned pumpkin puree
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional, for garnish)
  • Ice cubes (for serving)


Instructions

  1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
  2. In a blender, combine the rinsed rice and 4 cups of water. Blend on high speed for about 1-2 minutes until the rice is finely ground.
  3. Pour the rice mixture into a large bowl or pitcher and let it sit at room temperature for at least 3 hours, or overnight in the refrigerator for a richer flavor.
  4. After soaking, strain the rice mixture through a fine mesh sieve or cheesecloth into a clean bowl or pitcher, discarding the rice solids.
  5. To the strained liquid, add the pumpkin puree, milk, sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until well combined.
  6. Chill the horchata in the refrigerator for at least 30 minutes before serving.
  7. Serve over ice and garnish with chopped pecans if desired.

Notes

  • For a creamier texture, substitute half of the milk with coconut milk.
