- 2 cups long-grain white rice
- 4 cups water
- 1 cup canned pumpkin puree
- 1 cup milk (dairy or non-dairy)
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup chopped pecans (optional, for garnish)
- Ice cubes (for serving)
Instructions
- Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
- In a blender, combine the rinsed rice and 4 cups of water. Blend on high speed for about 1-2 minutes until the rice is finely ground.
- Pour the rice mixture into a large bowl or pitcher and let it sit at room temperature for at least 3 hours, or overnight in the refrigerator for a richer flavor.
- After soaking, strain the rice mixture through a fine mesh sieve or cheesecloth into a clean bowl or pitcher, discarding the rice solids.
- To the strained liquid, add the pumpkin puree, milk, sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until well combined.
- Chill the horchata in the refrigerator for at least 30 minutes before serving.
- Serve over ice and garnish with chopped pecans if desired.
Notes
- For a creamier texture, substitute half of the milk with coconut milk.
- Add a splash of rum or bourbon for an adult twist on this refreshing drink.
