- 12 mini potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the mini potatoes, then pierce each one with a fork.
- In a bowl, combine olive oil, salt, pepper, garlic powder, and rosemary.
- Toss the mini potatoes in the oil mixture until evenly coated.
- Arrange the potatoes on a baking sheet and bake for 25-30 minutes, or until fork-tender and golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- Serve with sour cream or your favorite dipping sauce.
- You can also add cheese or bacon bits as toppings after baking.
