Description

Delicious mini baked potatoes that are crispy on the outside and soft on the inside. Perfect for appetizers or side dishes!


Ingredients

  • 12 mini potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the mini potatoes, then pierce each one with a fork.
  3. In a bowl, combine olive oil, salt, pepper, garlic powder, and rosemary.
  4. Toss the mini potatoes in the oil mixture until evenly coated.
  5. Arrange the potatoes on a baking sheet and bake for 25-30 minutes, or until fork-tender and golden brown.
  6. Remove from the oven and let cool for a few minutes before serving.
