Description

Deliciously fudgy brownies infused with mint flavor and topped with a rich chocolate ganache.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract for ganache


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a medium bowl, mix together the sugar, cocoa powder, and melted butter.
  3. Add in the eggs, vanilla extract, and peppermint extract; mix until smooth.
  4. Stir in the flour and salt until just combined, then fold in the chocolate chips.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out with few moist crumbs.
  7. For the ganache, mix the powdered sugar, milk, and peppermint extract until smooth.
  8. Spread the ganache over the cooled brownies and let it set before cutting into squares.

Notes

  • For a stronger mint flavor, adjust the amount of peppermint extract to taste.
  • These brownies can be stored in an airtight container for up to a week.
