Deliciously fudgy brownies infused with mint flavor and topped with a rich chocolate ganache.

- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract for ganache
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a medium bowl, mix together the sugar, cocoa powder, and melted butter.
- Add in the eggs, vanilla extract, and peppermint extract; mix until smooth.
- Stir in the flour and salt until just combined, then fold in the chocolate chips.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 20-25 minutes or until a toothpick inserted comes out with few moist crumbs.
- For the ganache, mix the powdered sugar, milk, and peppermint extract until smooth.
- Spread the ganache over the cooled brownies and let it set before cutting into squares.
Notes
- For a stronger mint flavor, adjust the amount of peppermint extract to taste.
- These brownies can be stored in an airtight container for up to a week.
