These Miso Butter Roasted Carrots are a flavorful and easy side dish that brings a burst of umami to your meal.


Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons miso paste
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • Salt to taste
  • 1 tablespoon sesame seeds, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together miso paste, melted butter, maple syrup, olive oil, sesame oil, and minced garlic.
  3. Add the carrot sticks to the bowl and toss well to coat them in the miso butter mixture.
  4. Spread the carrots on a baking sheet in a single layer and sprinkle with a little salt.
  5. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
  6. Remove from the oven and sprinkle with sesame seeds before serving.
