- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons miso paste
- 2 tablespoons unsalted butter, melted
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- Salt to taste
- 1 tablespoon sesame seeds, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together miso paste, melted butter, maple syrup, olive oil, sesame oil, and minced garlic.
- Add the carrot sticks to the bowl and toss well to coat them in the miso butter mixture.
- Spread the carrots on a baking sheet in a single layer and sprinkle with a little salt.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and sprinkle with sesame seeds before serving.
Notes
- For extra flavor, consider adding a splash of rice vinegar to the miso mixture.
- These carrots pair well with grilled meats or can be served on a salad.
