Description

Deliciously chewy and fudgy mochi brownies that combine the best of both worlds.


Ingredients

  • 1 cup glutinous rice flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking pan.
  2. In a large bowl, whisk together the glutinous rice flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth.
  5. Fold in the chocolate chips.
  6. Transfer the batter to the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick comes out with a few moist crumbs.
  8. Let cool before cutting into squares and serving.

Notes

  • For a richer taste, add a pinch of espresso powder to the batter.
  • These brownies can be stored in an airtight container for up to 3 days.
