Description

Delicious and modern take on traditional börek rolls filled with spinach, feta, and a sweet honey drizzle.


Ingredients

  • 1 package (1 lb) phyllo dough, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1/4 cup green onions, finely chopped
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, green onions, dill, black pepper, and salt. Mix until well combined.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again. Repeat this process until you have 4 layers.
  4. Spoon about 1/4 cup of the spinach and cheese mixture along one edge of the phyllo dough. Roll the dough tightly around the filling to form a log shape. Place the roll seam-side down on the prepared baking sheet.
  5. Repeat the process with the remaining phyllo dough and filling, placing each roll on the baking sheet with some space between them.
  6. Brush the tops of the rolls with any remaining melted butter. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  7. While the rolls are baking, warm the honey in a small saucepan over low heat until it is runny.
  8. Once the rolls are done, remove them from the oven and drizzle the warm honey over the top before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • Substitute the spinach with other greens like kale or Swiss chard for a different flavor profile.
