Description

A rich and flavorful Christmas spice cake topped with creamy eggnog buttercream.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1/4 cup dark molasses
  • 2 cups eggnog for frosting
  • 1 cup butter, softened for frosting
  • 4 cups powdered sugar for frosting


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, sift together the flour, baking powder, baking soda, spices, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla.
  5. Mix in the flour mixture alternately with buttermilk and molasses.
  6. Divide batter between prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  8. Let cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. For frosting, beat together eggnog and butter until smooth. Gradually add powdered sugar until desired consistency is reached.
  10. Frost the cooled cakes and serve.

Notes

  • Make sure the butter is at room temperature for easy creaming.
  • The cake flavors develop even more if you let it sit overnight before serving.
