Description
A rich and flavorful Christmas spice cake topped with creamy eggnog buttercream.

- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/4 cup dark molasses
- 2 cups eggnog for frosting
- 1 cup butter, softened for frosting
- 4 cups powdered sugar for frosting
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, sift together the flour, baking powder, baking soda, spices, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla.
- Mix in the flour mixture alternately with buttermilk and molasses.
- Divide batter between prepared cake pans and smooth the tops.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- For frosting, beat together eggnog and butter until smooth. Gradually add powdered sugar until desired consistency is reached.
- Frost the cooled cakes and serve.
Notes
- Make sure the butter is at room temperature for easy creaming.
- The cake flavors develop even more if you let it sit overnight before serving.
