Ingredients

- 1 leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 lemon (juice and zest)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix garlic, cumin, coriander, cinnamon, ginger, turmeric, cayenne, salt, and pepper.
- Incorporate olive oil and lemon juice to form a paste.
- Rub the spice mixture all over the leg of lamb.
- Place the lamb in a roasting pan and cover with foil.
- Roast for 1.5 to 2 hours, removing foil for the last 30 minutes to brown the meat.
- Let rest for 15 minutes before slicing.

- For best flavors, marinate the lamb overnight.
- Serve with couscous or a side of roasted vegetables.
