A creamy and delicious Mushroom and Seitan Stroganoff recipe that is perfect for a comforting meal.
Ingredients

- 200 g seitan, sliced into strips
- 250 g fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 tsp sweet paprika
- 200 ml plant-based cream (soy, oat, or unsweetened coconut)
- 1 tbsp soy sauce
- 1 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)
- Pasta, rice, or mashed potatoes for serving
Instructions
- Heat olive oil in a large skillet. Sauté onion and garlic until soft.
- Add mushrooms and cook until browned and tender.
- Stir in seitan and cook for 3 minutes.
- Add mustard, soy sauce, paprika, salt, and pepper. Mix well.
- Pour in plant-based cream and simmer for 5–7 minutes until thickened.
- Serve hot with pasta, rice, or mashed potatoes. Garnish with parsley if desired.
Notes
- Feel free to adjust the seasoning according to your taste.
- This dish can be made ahead of time and reheated.
- For a gluten-free version, ensure the seitan is gluten-free or substitute with another protein.
