- 2 tablespoons olive oil
- 1 medium leek, white and light green parts only, sliced
- 8 ounces mushrooms, sliced (such as cremini or button)
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 1 tablespoon Dijon mustard
- 1 sheet puff pastry, thawed
- 1 cup shredded Gruyère cheese
- 1 egg, beaten (for egg wash)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the sliced leek and sauté for about 3 minutes until softened.
- Add the sliced mushrooms and garlic to the skillet. Cook for another 5-7 minutes until the mushrooms are browned and any liquid has evaporated. Stir in the thyme, and season with salt and pepper. Remove from heat and let cool slightly.
- Roll out the puff pastry on a lightly floured surface into a 12-inch circle. Transfer it to the prepared baking sheet.
- Spread the Dijon mustard evenly over the puff pastry, leaving a 1-inch border around the edges.
- Sprinkle the shredded Gruyère cheese over the mustard. Top with the mushroom and leek mixture, spreading it evenly.
- Fold the edges of the puff pastry over the filling, pleating it as you go to create a rustic look.
- Brush the exposed pastry edges with the beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before slicing and serving.
Notes
- For added flavor, consider mixing in some cooked bacon or pancetta with the mushroom and leek filling.
- You can substitute the Gruyère cheese with feta or goat cheese for a different taste profile.
