Description

Ingredients

  • 2 pounds beef shank or short ribs, chopped into bite-sized pieces
  • 8 cups water
  • 2 medium potatoes, peeled and cut into quarters
  • 1 medium onion, quartered
  • 2 ears corn, each cut into thirds
  • 2 cups green beans, trimmed
  • 1 tablespoon whole peppercorns
  • 2 teaspoons salt (to taste)
  • 1 tablespoon fish sauce (optional)
  • Fresh cilantro or chopped green onions for garnish


Instructions

  1. Place the beef chunks in a large pot and add the water. Heat over medium-high until boiling, skimming off any impurities.
  2. Add the quartered onion and whole peppercorns to the pot. Lower the heat and simmer for 1.5 to 2 hours until the beef is tender.
  3. Add the quartered potatoes and corn pieces, cooking for about 10 minutes until the potatoes are fork-tender.
  4. Stir in the green beans, salt, and fish sauce (if using). Cook for an additional 5 to 7 minutes until the green beans are vibrant and tender.
  5. Taste the soup and adjust seasoning as needed. Remove from heat and let rest for a few minutes before serving.
  6. Ladle the soup into bowls and garnish with fresh cilantro or chopped green onions.
