Ingredients

- 2 pounds beef shank or short ribs, chopped into bite-sized pieces
- 8 cups water
- 2 medium potatoes, peeled and cut into quarters
- 1 medium onion, quartered
- 2 ears corn, each cut into thirds
- 2 cups green beans, trimmed
- 1 tablespoon whole peppercorns
- 2 teaspoons salt (to taste)
- 1 tablespoon fish sauce (optional)
- Fresh cilantro or chopped green onions for garnish
Instructions
- Place the beef chunks in a large pot and add the water. Heat over medium-high until boiling, skimming off any impurities.
- Add the quartered onion and whole peppercorns to the pot. Lower the heat and simmer for 1.5 to 2 hours until the beef is tender.
- Add the quartered potatoes and corn pieces, cooking for about 10 minutes until the potatoes are fork-tender.
- Stir in the green beans, salt, and fish sauce (if using). Cook for an additional 5 to 7 minutes until the green beans are vibrant and tender.
- Taste the soup and adjust seasoning as needed. Remove from heat and let rest for a few minutes before serving.
- Ladle the soup into bowls and garnish with fresh cilantro or chopped green onions.
Notes
- For added depth, consider incorporating a tablespoon of soy sauce or a splash of Worcestershire sauce.
- If you enjoy heat, add sliced jalapeños or chili flakes during cooking.
