Description

A delicious and healthy no-sugar trail mix cluster featuring pumpkin seeds and cocoa, perfect for keto dieters.


Ingredients

Scale
  • 1 cup pumpkin seeds
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup erythritol (or other keto-friendly sweetener)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine pumpkin seeds, cocoa powder, coconut oil, shredded coconut, erythritol, vanilla extract, and salt.
  3. Mix until well combined.
  4. Line a baking sheet with parchment paper and drop spoonfuls of the mixture onto the sheet.
  5. Bake for 15-20 minutes, or until clusters are set.
