This delicious carrot cake is made without sugar and flour, perfect for a healthier dessert option.


Ingredients

  • 2 cups grated carrots
  • 1 cup almond flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix the grated carrots, almond flour, applesauce, maple syrup, eggs, baking powder, vanilla extract, ground cinnamon, and salt until well combined.
  3. Fold in the chopped walnuts.
  4. Pour the batter into the prepared cake pan.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
