A creamy and delicious one pot pasta dish inspired by French onion soup, featuring caramelized onions and melted cheese.

- 2 tablespoons butter
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme (or 1/2 tsp dried)
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz (about 225g) pasta (like fettuccine or linguine)
- 3 cups beef broth (or vegetable broth for vegetarian)
- 1/2 cup heavy cream
- 1/2 cup grated Gruyère or Swiss cheese (plus extra for topping)
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, melt butter over medium heat. Add sliced onions and cook slowly for 20–25 minutes, stirring often, until deeply golden and caramelized.
- Stir in garlic, thyme, salt, and pepper. Cook for 1 minute. Add balsamic vinegar to deglaze the pot, scraping up any browned bits.
- Add uncooked pasta and beef broth. Bring to a boil, then reduce heat to a simmer. Cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Stir in heavy cream and cheese. Cook 1–2 more minutes until creamy and cheesy.
- Spoon into bowls, top with more cheese if desired, and garnish with parsley.
Notes
- For a vegetarian version, use vegetable broth instead of beef broth.
- Feel free to adjust the amount of cheese to your liking.
- Leftovers can be stored in the refrigerator for up to 3 days.
