A simple and delicious one-pot meal featuring smoked sausage and rice, perfect for a quick dinner.

- 1 tablespoon olive oil
- 12 oz (340 g) smoked sausage, sliced (beef or turkey sausage works great)
- 1 small onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 cup long grain white rice
- 2 ¼ cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme or Italian seasoning
- Salt and pepper to taste
- Chopped green onions or parsley for garnish (optional)
Instructions
- In a large skillet or pot, heat olive oil over medium heat. Add sliced sausage and cook until browned on both sides. Remove and set aside.
- In the same pot, sauté onion and bell pepper until softened, about 4–5 minutes. Add garlic and cook for another 30 seconds.
- Stir in the uncooked rice, paprika, thyme, salt, and pepper. Toast the rice for 1–2 minutes, then pour in the chicken broth.
- Return the sausage to the pot, stir everything together, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and top with green onions or parsley if desired.

- Feel free to customize the vegetables based on your preference.
- This dish can be made with different types of sausage for varied flavors.
- Leftovers can be stored in the refrigerator for up to 3 days.
