Description

A comforting and nourishing soup packed with winter vegetables to eliminate any vegetable guilt.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cups chopped kale
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in carrot and celery, cooking for another 5 minutes.
  4. Add kale, diced tomatoes, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let it simmer for 20-25 minutes.
