Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cups chopped kale
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until softened.
- Stir in carrot and celery, cooking for another 5 minutes.
- Add kale, diced tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let it simmer for 20-25 minutes.
- Serve hot and enjoy your guilt-free soup!
