Description
Discover a unique recipe for Osaka Okonomiyaki Waffles, a delicious twist on the traditional Japanese dish.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ cups dashi broth (or water)
- 2 large eggs
- 2 cups shredded cabbage
- ½ cup chopped green onions
- ½ cup cooked and crumbled bacon or pork belly
- ¼ cup grated cheese (optional)
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon baking powder
- Salt and pepper to taste
For serving:
- Okonomiyaki sauce (store-bought or homemade)
- Japanese mayonnaise
- Aonori (seaweed flakes)
- Katsuobushi (bonito flakes)
Instructions
- In a large mixing bowl, combine the flour, dashi broth, eggs, soy sauce, and baking powder. Whisk until smooth.
- Add the shredded cabbage, green onions, cooked bacon or pork belly, and cheese (if using) to the batter. Season with salt and pepper, and mix until well combined.
- Preheat a waffle maker and lightly grease it with vegetable oil.
- Pour enough batter into the waffle maker to cover the surface (about 1 to 1 ½ cups, depending on your waffle maker). Close the lid and cook according to the manufacturer’s instructions, usually about 5-7 minutes, until golden brown and crispy.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve the waffles hot, drizzled with okonomiyaki sauce and Japanese mayonnaise. Sprinkle with aonori and katsuobushi for added flavor.
Notes
- For a spicy kick, add a teaspoon of sriracha or chili paste to the batter.
- Try substituting the bacon or pork belly with shrimp or tofu for a different protein option.
