Description

Oysters Rockefeller are a classic dish made with fresh oysters on the half shell, topped with a rich mixture of butter, parsley, and other ingredients, then baked until golden.


Ingredients

  • 12 fresh oysters
  • 1/2 cup unsalted butter
  • 1 cup parsley, finely chopped
  • 1/4 cup green onions, finely chopped
  • 1/4 cup breadcrumbs
  • 2 tablespoons Pernod (or other anise-flavored liqueur)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Shuck the oysters and place them on a baking sheet.
  3. In a skillet, melt the butter over medium heat. Add the parsley and green onions and sauté for 2 minutes.
  4. Stir in the breadcrumbs, Pernod, lemon juice, cayenne, salt, and black pepper. Cook until mixed well.
  5. Top each oyster with a spoonful of the mixture.
  6. Bake in the preheated oven for 10-15 minutes or until golden and bubbly.
  7. Serve hot and enjoy!

Notes

  • For a richer flavor, you can add grated cheese on top before baking.
  • Serve with lemon wedges for extra zest.
