Description
Oysters Rockefeller are a classic dish made with fresh oysters on the half shell, topped with a rich mixture of butter, parsley, and other ingredients, then baked until golden.

- 12 fresh oysters
- 1/2 cup unsalted butter
- 1 cup parsley, finely chopped
- 1/4 cup green onions, finely chopped
- 1/4 cup breadcrumbs
- 2 tablespoons Pernod (or other anise-flavored liqueur)
- 1 tablespoon lemon juice
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Shuck the oysters and place them on a baking sheet.
- In a skillet, melt the butter over medium heat. Add the parsley and green onions and sauté for 2 minutes.
- Stir in the breadcrumbs, Pernod, lemon juice, cayenne, salt, and black pepper. Cook until mixed well.
- Top each oyster with a spoonful of the mixture.
- Bake in the preheated oven for 10-15 minutes or until golden and bubbly.
- Serve hot and enjoy!
Notes
- For a richer flavor, you can add grated cheese on top before baking.
- Serve with lemon wedges for extra zest.
