- 2 pounds chicken thighs, boneless and skinless
- 2 tablespoons sumac
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 4 flatbreads
- 2 tomatoes, sliced
- 1 cucumber, sliced
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
Instructions
- In a bowl, mix sumac, paprika, garlic powder, onion powder, salt, and black pepper with olive oil to create a marinade.
- Add the chicken thighs to the marinade, making sure they are well coated. Let marinate for at least 30 minutes.
- Preheat the grill or skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the heat and let it rest for a few minutes before slicing.
- Warm the flatbreads on the grill or in a pan.
- Assemble by placing sliced chicken on the flatbread, then topping with sliced tomatoes, cucumbers, and a drizzle of yogurt and lemon juice.
- Serve warm.
