A festive and flavorful pasta dish inspired by Pappadeaux, featuring a mix of meats, vegetables, and a creamy Cajun sauce.

- 12 oz penne or linguine pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 lb Andouille sausage, sliced
- 1/2 lb large shrimp, peeled and deveined
- 1/2 lb boneless chicken breast, sliced
- 1 bell pepper (red or green), sliced
- 1/2 red onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1–2 teaspoons Cajun seasoning (to taste)
- Salt and pepper to taste
- Chopped parsley (for garnish)
- Optional: crushed red pepper flakes for extra heat
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
- In a large skillet over medium-high heat, heat olive oil and butter. Add the chicken and sausage slices. Season with Cajun seasoning. Cook until browned and cooked through. Remove and set aside.
- In the same pan, sauté the bell peppers and red onion until tender. Add garlic and cook for 1 more minute. Add shrimp and cook until pink (about 2–3 minutes).
- Reduce heat to medium. Pour in heavy cream and chicken broth. Stir and bring to a simmer. Add Parmesan cheese and adjust seasoning with more Cajun spices, salt, and pepper as needed.
- Return chicken and sausage to the skillet. Add the cooked pasta and toss everything together until well coated in the sauce.
- Garnish with fresh parsley and extra Parmesan if desired. Serve hot with crusty bread.
Notes
- Feel free to adjust the level of Cajun seasoning to your taste.
- This dish pairs well with a side salad or garlic bread.
- For a spicier version, add more crushed red pepper flakes.
