Description

A festive and flavorful pasta dish inspired by Pappadeaux, featuring a mix of meats, vegetables, and a creamy Cajun sauce.


Ingredients

  • 12 oz penne or linguine pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 lb Andouille sausage, sliced
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb boneless chicken breast, sliced
  • 1 bell pepper (red or green), sliced
  • 1/2 red onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 12 teaspoons Cajun seasoning (to taste)
  • Salt and pepper to taste
  • Chopped parsley (for garnish)
  • Optional: crushed red pepper flakes for extra heat

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil and butter. Add the chicken and sausage slices. Season with Cajun seasoning. Cook until browned and cooked through. Remove and set aside.
  3. In the same pan, sauté the bell peppers and red onion until tender. Add garlic and cook for 1 more minute. Add shrimp and cook until pink (about 2–3 minutes).
  4. Reduce heat to medium. Pour in heavy cream and chicken broth. Stir and bring to a simmer. Add Parmesan cheese and adjust seasoning with more Cajun spices, salt, and pepper as needed.
  5. Return chicken and sausage to the skillet. Add the cooked pasta and toss everything together until well coated in the sauce.
  6. Garnish with fresh parsley and extra Parmesan if desired. Serve hot with crusty bread.
