A delicious blend of roasted butternut squash and Parmesan cheese seasoned to perfection.

- 1 medium butternut squash, peeled and cubed
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine butternut squash, olive oil, garlic powder, salt, and pepper. Toss to coat.
- Spread the squash in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes until tender.
- Remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and golden.
- Garnish with fresh parsley before serving.
Notes
- For a different flavor, try adding a pinch of cayenne pepper.
- Store leftovers in an airtight container in the fridge for up to 3 days.
