Description

A delicious blend of roasted butternut squash and Parmesan cheese seasoned to perfection.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash, olive oil, garlic powder, salt, and pepper. Toss to coat.
  3. Spread the squash in a single layer on a baking sheet.
  4. Roast in the oven for 25-30 minutes until tender.
  5. Remove from the oven and sprinkle with Parmesan cheese.
  6. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and golden.
  7. Garnish with fresh parsley before serving.

Notes

  • For a different flavor, try adding a pinch of cayenne pepper.
