- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 eggs
- 1 cup almond flour
Instructions
- Preheat the oven to 425°F (220°C).
- Cut zucchinis into thin fries.
- In a bowl, mix Parmesan cheese, Italian seasoning, garlic powder, and salt.
- In another bowl, beat eggs.
- Dip each zucchini fry into the egg, then coat in the cheese mixture.
- Place fries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
Notes
- For extra crispiness, broil the fries for the last 2 minutes of baking.
- Serve with marinara sauce for dipping.
