Description

Crispy and delicious Parmesan zucchini fries that are keto-friendly and low in carbs.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup almond flour


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut zucchinis into thin fries.
  3. In a bowl, mix Parmesan cheese, Italian seasoning, garlic powder, and salt.
  4. In another bowl, beat eggs.
  5. Dip each zucchini fry into the egg, then coat in the cheese mixture.
  6. Place fries on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown and crispy.

Notes

  • For extra crispiness, broil the fries for the last 2 minutes of baking.
  • Serve with marinara sauce for dipping.
