Description

Deliciously spicy and sweet, these peppery sweet tomatoes make a perfect side dish or salad ingredient.


Ingredients

  • 4 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon fresh basil, chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cherry tomatoes, olive oil, balsamic vinegar, black pepper, salt, and sugar. Toss to coat.
  3. Spread the mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes or until the tomatoes are caramelized.
  5. Remove from the oven and stir in the fresh basil.
  6. Serve warm or at room temperature.

Notes

  • For extra heat, add a pinch of red pepper flakes.
