Description

A delicious Persian dish featuring crispy rice and a golden crust.


Ingredients

Scale
  • 2 cups basmati rice
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon saffron threads
  • 1/4 cup yogurt (optional)


Instructions

  1. Rinse the rice until the water runs clear. Soak the rice in water for at least 30 minutes.
  2. In a pot, bring 4 cups of water to a boil. Add soaked rice and salt. Cook until the rice is al dente.
  3. Drain the rice and let it cool for a few minutes.
  4. In a nonstick pan, heat the vegetable oil. Add saffron dissolved in a tablespoon of hot water.
  5. Add the rice to the pan, forming an even layer. Cover and cook on low heat for about 30 minutes until the bottom is crispy.
  6. Once done, invert onto a plate, taking care to keep the crispy layer intact.

Notes

  • For a richer flavor, add a layer of yogurt before cooking.
  • You can serve the rice cake with stews or yogurt.
