Description
A delicious Persian dish featuring crispy rice and a golden crust.
Ingredients
Scale
- 2 cups basmati rice
- 4 cups water
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon saffron threads
- 1/4 cup yogurt (optional)
Instructions
- Rinse the rice until the water runs clear. Soak the rice in water for at least 30 minutes.
- In a pot, bring 4 cups of water to a boil. Add soaked rice and salt. Cook until the rice is al dente.
- Drain the rice and let it cool for a few minutes.
- In a nonstick pan, heat the vegetable oil. Add saffron dissolved in a tablespoon of hot water.
- Add the rice to the pan, forming an even layer. Cover and cook on low heat for about 30 minutes until the bottom is crispy.
- Once done, invert onto a plate, taking care to keep the crispy layer intact.
Notes
- For a richer flavor, add a layer of yogurt before cooking.
- You can serve the rice cake with stews or yogurt.
