Description

A delicious recipe for Pistachio-Crusted Chicken Cutlets that combines tender chicken with a crunchy pistachio coating.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup shelled pistachios, finely chopped
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  3. In a shallow bowl, combine the chopped pistachios, breadcrumbs, garlic powder, onion powder, salt, pepper, and Parmesan cheese. Mix well.
  4. In another shallow bowl, whisk the eggs until well beaten. In a third shallow bowl, place the flour.
  5. Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten eggs, then coat it with the pistachio mixture, pressing gently to adhere.
  6. Heat the olive oil in a large skillet over medium heat. Once hot, add the coated chicken cutlets and cook for about 3-4 minutes on each side, or until golden brown.
  7. Transfer the browned cutlets to the prepared baking sheet and bake in the preheated oven for 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  8. Remove from the oven and let rest for a few minutes before serving.

Notes

  • For extra flavor, try adding a teaspoon of smoked paprika to the pistachio mixture.
  • You can also substitute walnuts or almonds for the pistachios if desired.
  • Serve with a side of mixed greens or a light salad for a complete meal.
