A delicious recipe for Pistachio-Crusted Chicken Cutlets that combines tender chicken with a crunchy pistachio coating.

- 1 pound boneless, skinless chicken breasts
- 1 cup shelled pistachios, finely chopped
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
- In a shallow bowl, combine the chopped pistachios, breadcrumbs, garlic powder, onion powder, salt, pepper, and Parmesan cheese. Mix well.
- In another shallow bowl, whisk the eggs until well beaten. In a third shallow bowl, place the flour.
- Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten eggs, then coat it with the pistachio mixture, pressing gently to adhere.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the coated chicken cutlets and cook for about 3-4 minutes on each side, or until golden brown.
- Transfer the browned cutlets to the prepared baking sheet and bake in the preheated oven for 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let rest for a few minutes before serving.
Notes
- For extra flavor, try adding a teaspoon of smoked paprika to the pistachio mixture.
- You can also substitute walnuts or almonds for the pistachios if desired.
- Serve with a side of mixed greens or a light salad for a complete meal.
