A flavorful and elegant main dish featuring rack of lamb coated with a crunchy pistachio crust.

- 1 rack of lamb
- 1 cup shelled pistachios
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Season the rack of lamb with salt and pepper.
- In a bowl, mix chopped pistachios, rosemary, garlic, and olive oil.
- Brush the rack with Dijon mustard and then press the pistachio mixture on top.
- Place the rack in a roasting pan and roast for 20-25 minutes for medium-rare.
- Let it rest for 10 minutes before slicing.
Notes
- For best results, use fresh pistachios.
- Allow the lamb to come to room temperature before cooking.
