Description

A flavorful and elegant main dish featuring rack of lamb coated with a crunchy pistachio crust.


Ingredients

Scale
  • 1 rack of lamb
  • 1 cup shelled pistachios
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the rack of lamb with salt and pepper.
  3. In a bowl, mix chopped pistachios, rosemary, garlic, and olive oil.
  4. Brush the rack with Dijon mustard and then press the pistachio mixture on top.
  5. Place the rack in a roasting pan and roast for 20-25 minutes for medium-rare.
  6. Let it rest for 10 minutes before slicing.

Notes

  • For best results, use fresh pistachios.
  • Allow the lamb to come to room temperature before cooking.
