Ingredients

- 1 cup unsalted pistachios
- 1 cup rolled oats
- 1 cup fresh raspberries
- 1/2 cup honey or maple syrup
- 1/4 cup almond butter
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine the pistachios, rolled oats, and salt.
- In a separate bowl, mix the honey, almond butter, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients and stir until combined.
- Gently fold in the raspberries.
- Transfer the mixture to the prepared baking dish and press down evenly.
- Bake for 20-25 minutes until golden brown.
- Let cool completely before cutting into bars.
