Description

A delightful twist on the classic tiramisu, incorporating the rich flavor of pistachios.


Ingredients

Scale
  • 1 cup shelled pistachios
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 1/4 cup coffee liqueur (optional)
  • 24 ladyfinger cookies
  • 2 tablespoons chopped pistachios for garnish


Instructions

  1. In a food processor, pulse the pistachios until finely ground.
  2. In a mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, combine mascarpone cheese, sugar, and vanilla, then fold in the whipped cream.
  4. Mix the espresso with coffee liqueur in a shallow dish.
  5. Quickly dip each ladyfinger in the espresso mixture and layer them in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  8. Chill for at least 4 hours before serving.
  9. Garnish with chopped pistachios before serving.

Notes

  • For a lighter texture, whip the mascarpone with the heavy cream.
  • Allow the tiramisu to chill overnight for the best flavor.
