A delightful twist on the classic tiramisu, incorporating the rich flavor of pistachios.
Ingredients

- 1 cup shelled pistachios
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 1/4 cup coffee liqueur (optional)
- 24 ladyfinger cookies
- 2 tablespoons chopped pistachios for garnish
Instructions
- In a food processor, pulse the pistachios until finely ground.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine mascarpone cheese, sugar, and vanilla, then fold in the whipped cream.
- Mix the espresso with coffee liqueur in a shallow dish.
- Quickly dip each ladyfinger in the espresso mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Chill for at least 4 hours before serving.
- Garnish with chopped pistachios before serving.
Notes
- For a lighter texture, whip the mascarpone with the heavy cream.
- Allow the tiramisu to chill overnight for the best flavor.
