Ingredients

  • 2 cups pumpkin puree
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 package (14 ounces) ginger snap cookies, crushed
  • 1 cup vanilla pudding mix
  • 2 cups milk
  • 1/2 cup chopped pecans (optional)
  • Whipped cream for topping


Instructions

  1. In a large mixing bowl, combine the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth and well combined.
  2. In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
  3. Prepare the vanilla pudding according to package instructions using 2 cups of milk. Allow it to set for about 5 minutes.
  4. In a trifle dish or a large glass bowl, layer half of the crushed ginger snap cookies on the bottom.
  5. Spread half of the pumpkin mixture over the cookies, followed by half of the vanilla pudding.
  6. Repeat the layers with the remaining ginger snap cookies, pumpkin mixture, and vanilla pudding.
  7. If desired, sprinkle chopped pecans on top for added crunch.
  8. Cover the trifle with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
  9. Before serving, top with whipped cream and additional pecans if desired.

Notes

  • For a lighter version, substitute the heavy cream with whipped topping and use sugar-free pudding mix.
