- 1 package (14 ounces) ginger snap cookies, crushed
- 1 cup vanilla pudding mix
- 2 cups milk
- 1/2 cup chopped pecans (optional)
- Whipped cream for topping
Instructions
- In a large mixing bowl, combine the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth and well combined.
- In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
- Prepare the vanilla pudding according to package instructions using 2 cups of milk. Allow it to set for about 5 minutes.
- In a trifle dish or a large glass bowl, layer half of the crushed ginger snap cookies on the bottom.
- Spread half of the pumpkin mixture over the cookies, followed by half of the vanilla pudding.
- Repeat the layers with the remaining ginger snap cookies, pumpkin mixture, and vanilla pudding.
- If desired, sprinkle chopped pecans on top for added crunch.
- Cover the trifle with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
- Before serving, top with whipped cream and additional pecans if desired.
Notes
- For a lighter version, substitute the heavy cream with whipped topping and use sugar-free pudding mix.
- You can also swap ginger snap cookies for graham crackers for a different flavor profile.
