Description

These delicate almond snowball cookies are filled with a sweet raspberry center, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely ground almonds
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • 1/2 cup powdered sugar, for dusting


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and 1 cup of powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually blend in the flour, ground almonds, and salt.
  5. Shape the dough into small balls, making an indentation in the center of each ball.
  6. Place a small amount of raspberry jam into each indentation.
  7. Bake for 12-15 minutes or until lightly golden.
  8. Remove from oven and allow to cool slightly.
  9. Dust with powdered sugar before serving.
