These delicate almond snowball cookies are filled with a sweet raspberry center, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely ground almonds
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
- 1/2 cup powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and 1 cup of powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually blend in the flour, ground almonds, and salt.
- Shape the dough into small balls, making an indentation in the center of each ball.
- Place a small amount of raspberry jam into each indentation.
- Bake for 12-15 minutes or until lightly golden.
- Remove from oven and allow to cool slightly.
- Dust with powdered sugar before serving.
Notes
- For a variation, you can use different fruit jams.
- Store cookies in an airtight container for up to a week.
