- 4 pounds brisket
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon gelatin
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat oven to 325°F (160°C).
- Season brisket with salt and pepper.
- In a large pot, heat olive oil over medium heat. Sear the brisket on both sides until browned.
- Add onions, carrots, celery, and garlic to the pot, cooking until softened.
- Pour in red wine and beef broth, simmer for 5 minutes.
- Sprinkle gelatin over the mixture and stir until dissolved.
- Cover the pot and transfer to the oven. Cook for 3-4 hours, or until brisket is tender.
- Remove brisket from the pot, let rest for 15 minutes before slicing.
- Serve with sauce from the pot.
