- 4 bone-in chicken legs
- 1 cup chicken fat (schmaltz)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix the chicken legs with chicken fat, salt, pepper, garlic, and rosemary.
- Place the chicken legs skin-side up on a roasting pan.
- Roast in the oven for about 45-50 minutes, or until the skin is crispy and the chicken is cooked through.
- Remove from oven and let rest for 10 minutes before serving.

- For extra flavor, marinate the chicken legs in the chicken fat and seasonings overnight.
