Delicious roasted garlic cauliflower steaks that are easy to prepare and packed with flavor.

- 1 large head of cauliflower
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 tablespoon fresh lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F.
- Remove the leaves from the cauliflower and trim the stem, keeping the head intact.
- Place the cauliflower head stem-side down on a cutting board and slice into 1-inch thick steaks.
- In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, smoked paprika, dried thyme, and lemon juice.
- Brush both sides of the cauliflower steaks generously with the garlic oil mixture.
- Place the cauliflower steaks on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
- Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
Notes
- For added flavor, sprinkle some grated Parmesan cheese on top during the last 5 minutes of roasting.
- Substitute thyme with rosemary for a different herbal note.
- Add a pinch of red pepper flakes to the garlic oil mixture for a spicy kick.
